Our story is a story of family that is rooted in the earth pistoiese over 115 years, through five generations. The origins of our company date back to the beginning of the Twentieth century , when the task was purely vegetable garden , dedicated to the production of vegetables for the local markets. It was the intuition to transform those "gardens of the town" in nurseries and ornamental plants to mark the beginning of an entrepreneurial journey. Driven by values such as passion, loyalty and a constant focus on sustainability , the company has grown to become a reference point in the culture of green in Italy and in Europe.
Over the decades, the company has grown overcoming enormous challenges, such as the destruction of the headquarters during the Second World War and the severe global crisis of 2011. The ability to diversify has always been our trump card. From the start of the planning the gardens in the '30s , until the founding of the Italian Academy of the Garden in 2012. It is precisely this continuous drive for innovation, which in 2013 was born on the farm restaurant Toscana Fair. From an idea of Paolo Mati , which has transformed the disused structures of the old shop and woodworking shop in a place dedicated to the flavours. Today, with our motto "plants, gardens, flavors, and culture of the green" combines the experience of the nursery to the culinary tradition , closing the circle with the origins horticultural Casimiro.

I started to fall in love with the kitchen, at school, where I've discovered and cultivated a passion strong in taste and for the flavors of natural resources. The kitchen I opened the doors to work, first in America, where I spent two years between New York and the Caribbean, and then on a private yacht, where I worked to refine my skills as a private chef. Back in Italy, I have specialized more and more by selecting raw materials in our territory, focusing in particular on the kitchen vacuum, low temperature and on the pickling of vegetables. I now have the opportunity to work in reality, as the Toscana Fair " is based on the vegetable garden, where we have plants of our production and the products are fresh, and this motivates me to explore and create new dishes to enhance the flavors of authentic nature, and Tuscany.
In the month of march 2023, the farmhouse restaurant, Toscana Fair is celebrating its first 10 years. A first milestone for a difficult challenge started by the great passion that binds Paolo Mati to the world of cooking.
